CHILLI WITH CAULIFLOWER RICE
Ingredients
200g premium beef mince
1/2 onion
200g frozen mixed vegetables
400g tinned tomatoes
2 teaspoons beef stock powder
100g chilli beans
200g cauliflower rice

Method
Slice the onion and brown in a large frying pan with the beef mince.
Add the frozen mixed vegetables, tinned tomatoes, beef stock powder and chilli beans to the saucepan, cover and simmer for 10-15 mins. Add in a small amount of water if needed
Cook the cauliflower rice in a small saucepan for 5-6 mins – add a bit of water to prevent it from sticking. Serve.
