PORK & VEGETABLE MEDLEY
Ingredients
300g pumpkin
300g pork steak
Salt and pepper
1 teaspoon oil
200g carrots
1 head of broccoli
100g onion
300g button mushrooms
1 garlic clove
4 cups spinach
1 tablespoon soy sauce

Method
Peel and dice the pumpkin. Add to a saucepan and cover with water, boil for 15-20 mins, until soft. Drain the water and mash.
Season the pork steaks with salt and pepper. Add the oil to a frying pan and cook the pork until browned on the outside and fully cooked in the middle.
Peel and dice the carrots, dice the broccoli. Add to a saucepan with a small amount of water, steam for 8-10 minutes.
Peel and slice the onion, slice the mushrooms and crush the garlic clove. Add to a frying pan and cook for 2-3 minutes.
Add the spinach leaves and soy sauce and continue to cook until the spinach leaves wilt and the soy sauce boils down. Season with salt and pepper. Serve.
