‘Zoodle’ bolognese recipe

ZOODLE BOLOGNESE

Ingredients

300g beef mince

100g onion

1 garlic clove

Salt and pepper

1 tin of tomatoes

1 teaspoon beef stock powder

4 white button mushrooms

300g courgettes

Method

Add the mince, diced onion and crushed garlic clove to a frying pan. Season with salt and pepper, brown for 6-8 minutes.

Add the tinned tomatoes, beef stock powder and diced mushrooms to the frying pan with a small amount of water. Simmer uncovered for 12-15 minutes (add more water if needed).

Cut the courgettes into ‘zoodles’ using a spiraliser or slice thinly, cook in a saucepan of boiling water for 4-5 minutes, drain once cooked. Serve.
